Trout Recipe

An acquaintance of mine posted this recipe in a mailing list:

6 whole trout, gutted and beheaded
2 cups of straw mushrooms, finely chopped
1/2 cup of yellow onion, grated
6 large cloves of garlic, crushed
3 tsp. of fresh rosemary, finely chopped
Salt and black pepper to taste
Olive oil

Mix mushrooms, onion, garlic, rosemary, salt, pepper, and 4 tbsp. olive
oil, and marinate for an hour.

Preheat oven to 350 degrees F. Evenly divide the mixture into the cavities of the fish, and wrap each in aluminum foil. Place into a baking pan brushed with olive oil. Cook for 25-30 minutes or until the fish are white, and flakes fall away from the bones.

Beheaded? Sorry, but that's just wrong.

Everything else sounds lovely.

I thought that was a rather odd way to phrase it, too, but since I don't know much about cooking fish, I wondered if 'beheaded' was the technical term.

I don't know if there's a technical term for it; I suppose "behead" is just as good a term as any. It's the idea of serving a "whole" fish with the head removed that I find rather unpleasant.
