Recipe: Artichoke Dip

From my friend Cynthia:

Artichoke Dip

1 can quartered artichokes
1/2 cup mayonnaise
1/2 cup Parmesan cheese
2 tablespoons Italian breadcrumbs
Your favorite seasonings (garlic, green onions, cayenne, Tabasco)

Mix 1 can of quartered artichokes with 1/2 cup mayonnaise and 1/2 cup of Parmesan cheese. Add Tabasco, onions, garlic, or cayenne to taste. Place in ceramic baking dish, sprinkle Italian bread crumbs on top, and bake at 350 degrees F for about 20 minutes or until dish begins to bubble and breadcrumbs are browned. Serve with your favorite crackers. Rosemary crackers are yummy with this!

I'll give the Tabasco and cayenne pepper a miss and throw in some spinach, dill, and maybe some Asiago cheese.
